Water often boils over when cooking pasta. Do you know why?
This is because the air bubbles that form in the pot when the water boils cannot escape because of the foam formed by the starch that is released from the pasta during cooking. The foam forms a film on top of the water that prevents the bubbles from escaping the pot. As the air bubbles accumulate, the pressure in the pot increases, lifting the starch film and causing the contents to boil over onto the stovetop.
Place a wooden spoon on the pot, so that the foam clings to it and leaves the surface of the water partially clear so that air bubbles can escape.
