Pasta carbonara
Carbonara
For 4 people
Ingredients:
1. 250 gr. of guanciale ( pork cheek )
2. 250 gr. pecorino cheese
3. 5 egg yolks
4. Black peppercorns
5. Pasta
Steps
1. Wash your hands for 20 seconds.
2. Fill a pot with hot water (accompanied by a parent), place it on the stovetop and wait for the water to boil, add salt.
3. Heat a frying pan on the oven , during this time you will cut two slices of pork cheek, then cut them into cubes (for help you can ask an adult near you) just after cutting them you can put them on the frying pan (to be sure that the frying pan is hot enough you can sprinkle both fingers with water then shake them over the frying pan)
4. When the pork cheek pieces are ready you can keep them aside in a bowl with the juice.
5. Take a bowl (steel or metal) and put the eggs. Add the pecorino, pepper and mix. Then, add the (cold) cheek juice and the cheek cubes. Stir until it becomes a cream.
Before draining the pasta, keep a tablespoon of cooking water and add it to the cream.
With a ladle take the pasta and add directly to the bowl with the cream
Turn off the heat of the pot, place the bowl on the pot of water (with the heat off), stir and add the pecorino to taste.
When the water evaporates from the sauce, add the cubes.
