Matricina sauce

Ingredients :  
1. 200 gr. Pecorino cheese  
2. 250 gr. guanciale ( pork cheek) or pancetta  
3,500 gr. of Pasta (Your choice)  
4. Pepper  
5. 500 gr. tomato puree
 
The Steps  
1. Wash your hands for 20 seconds.
 
2. Fill a pot with hot water (accompanied by a parent), place it on the stove and wait for the water to boil, add salt.
 
3. Put a pan on the oven , meanwhile you are going to cut two slices of pork cheek, then cut them into cubes (for help ask an adult near you) just after cutting them you can put them in the pan.
(To make sure the pan is hot enough, you can splash both fingers with water and then shake them over the pan.)
4. When the pork cheek pieces are ready, you can take them out of the pan and put them in a bowl with the juice. Then, in the same pan, add a drizzle of oil, a little chili pepper and garlic. When the garlic is golden brown, add the tomatoes.
 
When the water has evaporated from the sauce, add the cheek cubes.
 
6. If the water is ready you can already add the pasta , and wait for the time indicated on the packaging. Drain the pasta. 
6.After the pasta is When ready, remove the pasta and add it to the sauce.
Add a spoonful of cooking water to the sauce
 
7. Mix everything together, add the pecorino, then place the pasta on a plate. Add more cheese! Enjoy! Enjoy !
