What is the difference between Tomato Passata and Tomato Sauce?

What is the difference between Tomato Passata and Tomato Sauce?

Tomatoes, as we know, are one of the essential ingredients in Italian cuisine. Two of the most common preparations featuring tomatoes are tomato passata and tomato sauce, which have distinct characteristics and uses, but are often confused or interchanged.

Let's start with the TOMATO PASSATA

Passata is made from raw tomatoes and becomes a basic ingredient that can be used to prepare a more elaborate tomato sauce. More specifically, tomato passata is the result of processing fresh tomatoes, from which the seeds and skin are removed through a sieving process. This results in a dense and smooth tomato puree. Tomato passata is a very versatile product, often used as a base for soups, sauces, and tomato-based dishes. Its silky, lump-free texture makes it ideal for preparations where a uniform consistency is desired, such as marinara sauce or pasta sauce.

TOMATO SAUCE

Tomato sauce, on the other hand, is a cooked preparation that can contain a variety of other ingredients and requires more elaborate preparation, such as cooking tomato passata with ingredients such as onions, garlic, basil, and salt. Tomato sauce can be used as a condiment for pasta, pizza, and other dishes, or as a base for other sauces, such as ragù. Tomato sauce tends to have a thicker texture than passata, thanks to the added ingredients that enrich its flavor.
