The history of macaroni dates back to the Arab era in Sicily. In the past, pasta was hollow in the center, which allowed it to dry more quickly. Hence the many tube pasta shapes we know in the field. The fact that they are perforated allows these pasta shapes to retain the sauce inside. This makes them an ideal format for creamy and flavorful sauces.
